My love of seafood is fueled, first and foremost, by the mere pescetarianism of eating most things that live in water.  I love the various pleasures involved in the handling and preparation, and then in the eating of fish.

Over the last 7 years I have prepared and served a tuna salad that has become the rave at birthday and cocktail parties, corporate holiday spreads, among friends and family. The blog’s intent is to share photographs and video footage of testimonials from catered Champagne and Tuna Tasting parties locally and in surrounding cities. Updates are forthcoming on retail stores providing taste samples and containers for purchase.

I would like to dedicate this blog to some of the true giants of the culinary world who helped to shape my love of food: George Brown,  James Beard,  Julia Child, the late Greg Gammage,  J-Glenn Murray,  Fernand Point,  and familial Creole roots.

Very special thanks to the following: An angel, Leigh Sutton for her continuous generosity and in making this blog possible, to Gerrard O’Connor, my breakfast buddy for a special contribution; Owen Lawrence for the plating display;  Nick Trice for his graphic design and photography skill;   John Searles, “The Blog Master” and many others too numerous to name for inspiration, prayers and time.
